Grant’s Veggie Pasta
My favourite dish.
Dpd asparagus, shallots, mushrooms, squash, red capsicums and basil.
Squash and asparagus lightly steamed mushrooms, capsicums shallots sautéed in a good olive oil .
Then all ingredients mixed in with a good quality pasta of your choice.
With a drizzle of olive oil and Parmesan cheese over the top.

Recipe
500g spaghetti
3tbsp olive oil
3 cups asparagus, chopped
1 shallot, diced
3 cups mixed mushrooms, sliced
2 red capsicums, sliced
Basil leaves, finely chopped
½ cup parmesan cheese.
Cook spaghetti according to package directions
Lightly steam the asparagus and squash.
In a large pan, heat 1tbsp of olive oil and sauté the mushrooms, capsicum and shallots.
Combine the vegetables and pasta and stir.
Drizzle olive oil and basil.
Serve warm, top with parmesan cheese to taste.
